Job Description Summary

Responsible for the proper preparation and production coordination of all menu items assigned to the bakery department, as assigned by supervisor.

Essential Duties & Responsibilities (other duties may be assigned)

1. Meet daily production and serving schedules with respect to all Dining Services units.
2. Requisition foodstuffs and supplies to meet daily production and preparation schedules.
3. Operate all equipment used in preparation and production of menu items assigned to his/her area employing proper safety procedures.
4. Advise food service helpers on portions, ingredients, quality control, etc., and ensure that standard recipes are followed to meet production schedules and University standards.
5. Responsible for cleaning, sanitation, and knowledge of safe working conditions and procedures.
6. Assist in the training and instruction of new employees, both regular and student, assigned to the bakery department.
7. Advise managers on possible new menu items and production methods; create and experiment with new recipes and menu items .
8. Assist in other food service areas where needed as directed by unit managers.
9. Demonstrated commitment to contribute to a safe work environment.

Required Education (minimum requirements)

o High School diploma, or an equivalent combination of education and experience from which comparable knowledge and abilities can be acquired.

Required Experience (minimum requirements)

o Three years experience working in a bakery, restaurant, institutional kitchen, hotel, or a similar food service operation as a skilled baker or equivalent position.

Desirable Education and/or Experience
Required Knowledge, Skills, and/or Abilities (minimum requirements)

o Demonstrated ability to perform as a skilled baker in baking processes such as frying, baking, cooking, preparation, and handling of all bakery item mixtures from recipe to finished product.
o Demonstrated knowledge of baking time, portion control,and production standards in a bakery department.
o Demonstrated ability to read and interpret recipes relative to quantity, consistency, and composition of all menu items assigned to me bakery department.
o Demonstrated knowledge of operation of all bakery department equipment.
o Demonstrated knowledge of sanitation standards required in the preservation of cooked and uncooked items and the prevention of food contamination.
o Demonstrated ability to work harmoniously with people in varying situations and in all areas when assigned. Ability to perform tasks such as raising and moving trays, racks, and cooking utensils.
o Good interpersonal and communication skills.

LANGUAGE SKILLS:
Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one on one situations to customers.
MATHEMATICAL SKILLS:
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
REASONING ABILITY:
Ability to apply common sense understanding to carry out basic written or oral instructions. Ability to deal with problems in standardized situations.

The employee must occasionally lift and/or move up to 100 pounds.
